Sweet and succulent Spot Prawns. These are sashimi grade.

If they are caught off the boat and delivered Live/Fresh , then I like to eat these raw after about 4-8 hours after they died. If you eat them raw when they are freshly killed, their meat is very crunchy and bland. By waiting for 4-8 hours, the proteins start to decompose slightly, thereby tenderizing and sweetening the meat, and making for a wonderful full sweet mouthful of juicy sweet prawn tasty goodness.

Spot Prawns

Location: FAO 67, British Columbia

Latin: Pandalus platyceros

Catch: Wild

Seasonality: May-June

Texture:  delicate, almost buttery, providing a sort of melt-in-your-mouth sensation

Flavor: Sweet, Fresh & Briny

Color: Bright red with spots
